Beschrijving
The red Bourgogne Couvent des Jacobins is a cuvée of several wines from the Côte d’Or, Côte Chalonnaise, and Côtes d’Auxerre (Chablis). The wine is aged for eight to ten months in oak and stainless steel and, when served slightly chilled during its first two years after bottling, is a treat with grilled or roasted red meat.
After its first few years, the Couvent des Jacobins becomes more complex, and the distinctive character of Pinot Noir becomes increasingly evident: aromas and flavors of ripe cherries, blackcurrants, and elegant spiciness. In good vintages, it can easily age six to seven years in the bottle.
